Irresistible Zucchini Casserole Recipe



This zucchini casserole recipe can be used for almost any occasion. It goes especially well with a nice grilled sirloin steak. It is also a welcome upgrade from regular plain stove-top stuffing. For some added color, substitute with a yellow or orange bell pepper instead.

Time to Cook: 25 minutes

INGREDIENTS
3 med zucchini, sliced
1 large onion, sliced thin
1 large green pepper, diced
8 oz sour cream
1 can cream of mushroom soup
8 oz Pepperidge Farms stuffing mix
1 stick (8 Tbsp) butter

PREPARATION
Boil zucchini, onion, and green pepper until tender and drain off water. Fold mushroom soup and sour cream together in a separate bowl. Layer half of the vegetable mixture in a large casserole. Spread half of the soup and sour cream mixture over the vegetables, followed by half of the dry stuffing mix. Drizzle half of the melted butter evenly over the stuffing. Repeat the sames layers again with the remaining portions of the ingredients. Bake at 350° for 25 minutes, top should be browned.
