Sweet Potato Casserole Recipe
Make this sweet potato casserole recipe whenever you want something rich and sweet that literally melts in your mouth with irresistible flavor. During the holidays this recipe is one of my family's most requested dishes! My favorite part would have to be the buttery pecan topping. It simply must be tasted, you will not regret it. Be sure to invite over the neighborhood gang, there will be plenty to go around.

INGREDIENTS
2 pounds sweet potatoes (3 cups mashed)
1/2 cup sugar
1/2 teaspoon salt
2 large eggs
1/2 cup milk
1/2 teaspoon vanilla
4 tablespoons melted butter (1/2 stick)
TOPPING
1/2 cup brown sugar
1/2 cup all-purpose flour
4 tablespoons melted butter
1/2 cup chopped pecans
PREPARATION
Wash sweet potatoes and boil in large pan to loosen the peels. Allow to cool, remove peels, mash potatoes thoroughly. Mix in salt and sugar. In a medium bowl, mix melted butter, eggs, milk, and vanilla. Add to mashed sweet potatoes and mix until even, ladle into greased 2-quart baking dish. Preheat oven to 350°. Prepare topping by mixing brown sugar, flour, and pecans in the melted butter, and drizzle evenly over potatoes. Bake for 40 minutes.
