Cheesy Spinach Casserole Recipe



Serve this appetizing spinach casserole recipe as a dip-like appetizer or as a healthy compliment to your main course. The cheese and cream of mushroom soup add a pleasing flavor to the spinach and make even your hard to please vegetable eaters asking for more. Combine the other ingredients while cooking the spinach to save time.

If serving as an appetizer, serve warm with tortilla chips. If serving it as a side dish, I would recommend eating it with grilled salmon or chicken, as well as some fresh fruit for a well rounded meal.

Time to Cook: 45 minutes

INGREDIENTS
2 (10 oz.) packages of frozen chopped spinach
1 can (10 1/2 ounces) cream of mushroom soup
2 eggs (beaten)
1 cup mayonaise
1 cup shredded cheddar cheese

PREPARATION
Cook spinach and drain, squeezing out all the moisture. Combine with rest of ingredients and turn in a large, buttered casserole dish. (Use a dish that does not allow spinach to be deeper than 2.5"). Bake at 350 degrees for 45 minutes.
