Peach Crisp

If you want to savor summer's fresh flavors in the winter, make this simple peach crisp with frozen fruit.



PREP:20 minutes
BAKE:40 minutes
OVEN: 350°F
MAKES:6 servings

INGREDIENTS
5 cups sliced, peeled peaches or frozen unsweetened peach slices, thawed (do not drain)
2 ½ teaspoons cornstarch
1 10-ounce package frozen red raspberries in syrup, thawed
1 ½ cups plain granola
2/3 cup flaked or shredded coconut
3 tablespoons butter, melted
Vanilla or cinnamon-flavored ice cream (optional)

PREPARATION
1.Place peaches in an ungreased 2-quart square baking dish. Sprinkle with cornstarch and toss gently to coat.
2. If desired, press the undrained raspberries through a sieve; discard seeds. Spoon raspberries over the peaches. Bake, uncovered, in a 350°F oven for 20 minutes.
3. Meanwhile, in a medium bowl combine granola, coconut, and melted butter. Stir partially cooked peach mixture gently. Sprinkle granola mixture over peaches. Bake for 20 to 25 minutes more or until topping is golden and edges are bubbly. Serve warm. If desired, serve with ice cream.
