Zucchini Sausage Crockpot Casserole Recipe



This crockpot casserole recipe is one of the easiest and most tasteful recipes I've ever made. This recipe is especially great when you are in a hurry and want to make a delicious Italian dinner. Every year, my brother Chris always requested that we eat mom's Italian casserole on his birthday. Since I was very busy during my day, I always thought that Mom spent many hours preparing the sauce for this meal. However, when I got married and Mom passed the family recipes on to me, I know now that she's a lot more time savvy than I thought. My family loves this casserole because of the taste and texture of the sausage and zucchini. I enjoy this recipe because of is homemade taste and 3 ingredient preparation. This zucchini sausage casserole is sure to be a tradition in your family too.



Time to Prepare: about 20 minutes
Time to Cook: 30 minutes
Servings: 6

INGREDIENTS
2 med. zucchini
1 lb. sausage
2 cups spaghetti sauce

PREPARATION
Cook sausage and cut into bite-sized pieces. Cook zucchini and drain. Combine sausage, zucchini and spaghetti sauce. Simmer or bake for 30 minutes at 350°F to blend flavors. Can be frozen. Best when made in a crockpot.
