Corned Beef Casserole Recipe



Try this corned beef casserole recipe for a meaty and pleasing meal if you are running low on fresh hamburger, or if you just want to change things up every now and again. This dish is one of my favorites to bring as a dish to share at family gatherings. Tip: use potato chips or buttered bread crumbs as a topping if you plan on saving the leftovers. But if you have a big enough crowd so that not much will be left, use torn-up slices of white bread for a crispy and chewy topping. (You can still save leftovers in this case, but you’ll have a better result re-heating in a toaster oven than a microwave.)



Time to Prepare: about 20 minutes
Time to Cook: 45 minutes
Servings: 8

INGREDIENTS
½ pkg. egg noodles, cooked
1 can corned beef
1 can cream of chicken soup
½ cup milk
1 cup grated American or Velveeta cheese
¾ tsp. onion flakes
¼ tsp. pepper

PREPARATION
Break corned beef into small pieces. Mix all ingredients. Pour into casserole. Top with crushed potato chips or buttered bread crumbs. Bake at 350°F for about 45 minutes or until bubbly.
