Chocolate Bread Pudding

This chocolate bread pudding dessert is for chocolate lovers! It offers a hefty dose of chocolate topped with cinnamon cream. Just before dinner, put this dish in the oven and it's ready to serve at dessert time.



PREP:30 minutes
BAKE: 45 minutes
COOL: 20 minutes
OVEN: 350°F
MAKES: 9 servings

INGREDIENTS
5 ½ cups white bread cubes, dried*
6 ounces bittersweet or semisweet chocolate, chopped
3 cups whipping cream
¾ cup granulated sugar
3 eggs
3 egg yolks
1/8 teaspoon salt
3 ounces bittersweet or semisweet chocolate, chopped
½ cup whipping cream
2 tablespoons powdered sugar
½ teaspoon ground cinnamon

PREPARATION
1. In a buttered 2-quart square baking dish toss together bread cubes and the 6 ounces chocolate; set aside. In a medium saucepan bring the 3 cups whipping cream to boiling over medium heat. Meanwhile, in a medium bowl whisk together granulated sugar, eggs, egg yolks, and salt. Slowly whisk 1 cup of hot cream into egg mixture. Whisk hot egg mixture back into cream in saucepan. Cook for 1 to 2 minutes over medium-low heat until sugar dissolves. Add the 3 ounces chocolate, stirring until melted. Pour over bread mixture in baking dish, stirring carefully until well coated.
2. Place baking dish in a large roasting pan. (Make sure there is at least 1 inch of space between the baking dish and the sides of the roasting pan.) Pour enough hot water into roasting pan to reach halfway up sides of baking dish. Bake, uncovered, in a 350°F oven for 45 to 55 minutes or until center is set. Remove chocolate bread pudding from water bath and cool for 20 minutes on a wire rack.
3. For cinnamon cream, in a medium mixing bowl beat the ½ cup. whipping cream, the powdered sugar, and cinnamon with an electric mixer on medium speed until soft peaks form (tips curl). Spoon over each serving of pudding.

*NOTE: To dry bread cubes, spread cubes in a 15x10x1-inch baking pan. Bake in a 300°F oven for 10 to 15 minutes or until bread cubes are dry, stirring once. Cool. (Bread cubes will continue to dry and crisp as they cool.) Or let bread cubes stand, loosely covered, at room temperature for 8 to 12 hours.
