Growing up, I learned a few perfect chicken casserole recipes from my grandmother that I still make on a regular basis. Since then, my collection has grown and grown as I discovered new recipes from my friends and relatives. I am pleased to share with you all of these family secrets that have been past down from generation to generation. Some of these date back to the 19th century, exposed here for the first time! In most cases, the casseroles can be prepared the best by using use 3-4 boneless skinless chicken breasts. Bring a pot of water to a rolling boil and simply let the cook the chicken for 20 minutes. Take the meat out with tongs, let it cool for 15 minutes and then chop it up into bite-sized pieces. These can be used right away for your casserole or wrapped up and saved in the fridge for later in the week. The water from the pot can also be saved as chicken stock for numerous other dishes.
