Cheesy Broccoli and
Chicken Casserole Recipe



This is my favorite broccoli and chicken casserole recipe. It's as simple as that. You may substitute low-fat mayo and Velveeta Light for a healthier dish. To make the Ritz cracker topping, place the crackers between a large folded sheet of wax paper and crush slowly with a rolling pin. This will reduce the number of flying stray cracker bits and will save your sanity!


INGREDIENTS
1 lb. boneless, skinless chicken
8 oz. frozen broccoli
1 can, cream of mushroom soup
1 c. mayonnaise
1 Tbsp. lemon juice
½ tsp. salt
1½ c. Velveeta cubes
Topping
1 c. Ritz crackers
1 Tbsp. melted butter

PREPARATION
Boil broccoli just to heat. Boil chicken and cut in chunks. Put broccoli and chicken in a casserole dish. Put remaining ingredients in a microwave bowl and heat, stirring every 30 seconds until cheese is melted. Pour over the chicken and broccoli. For the topping, combine crackers and butter; put on top of casserole. Bake at 350° until heated through.
