Asparagus Ham Bake
This asparagus ham bake makes an excellent breakfast. Panko are Japanese-style bread crumbs, which are coarser than American bread crumbs. You can find them in Asian food stores or in the ethnic section of your supermarket.

MAKES: 6 servings
INGREDIENTS
1 10¾ -ounce can condensed cream of asparagus soup
¾ cup milk
2 cups cubed cooked ham (about 10 ounces)
2 cups cooked white rice
1 9-ounce package frozen cut asparagus, thawed
½ cup shredded Swiss cheese (2 ounces)
¼ cup finely chopped onion
½ cup panko (Japanese-style) bread crumbs
2 tablespoons butter, melted
PREPARATION
1. In a large bowl combine soup and milk. Add ham, rice, asparagus, cheese, and onion. Spoon ham mixture into an ungreased 2-quart square baking dish.
2. In a small bowl combine bread crumbs and butter; sprinkle over ham mixture. Bake, uncovered, in a 375°F oven for 40 to 45 minutes or until heated through and lightly browned. Let stand for 10 minutes before serving.
